Paleo Rice? Try This Cauliflower Rice Recipe!
I decided recently (on one of those days that my jeans felt extra tight) that I needed to do something about my weight, and so because I’ve had success in the past with the HCG diet (also known as the 4 phase fat elimination plan), I decided to give it another go.
Then, while trying to refresh my memory with a little research, I realised that there was yet another version of the HCG diet – HCG 2.0!
I bought the HCG 2.0 book (yes it’s available on Kindle as well as paperback), read it in a couple of hours (it’s a short read), and I was amazed at how much more variety of food one can eat on that version of the diet!
So cut a long story short, I gave HCG 2.0 a go and found it much easier with good consistent weight loss, but I ended up quitting just a couple of weeks in as my head just wasn’t in it… (oh well – another day..).
The good thing that came out of my experiment with the HCG 2.0 diet however (apart from a small amount of weight loss) was this Cauliflower Rice recipe 🙂
Yummy Cauliflower Rice
- 2 cups chopped cauliflower
- 1 small chopped capsicum
- 1 small chopped zucchini
- 2 cloves garlic
- 2 tablespoons finely chopped preserved jalapeno
- 1/2 lemon
- Smoked paprika
- Cayenne pepper
- Ground cumin
- Tamari sauce
- Salt & pepper
The how to:
Finely chop the cauliflower until it is in pieces approx the size of rice grains (using a food processor or blender) and put in a bowl. Add salt, 1 tsp smoked paprika, 1/8 tsp cayenne, 1.5 tsp ground cumin. Mix to combine.
Put 1 tablespoon of coconut oil in a frying pan or wok.
Add the capsicum and zucchini and the crushed garlic.
Once you can see they are starting to soften add the cauliflower. Stir often until heated through.
Add the juice of half a small lemon, jalapeno and several big splashes of Tamari.
Stir to combine, then cover and leave on a low heat until vegetables are soft stirring regularly to prevent sticking.
Serve with either meat of your choice, egg, or sliced avocado, along with a slice of toasted Paleo Pullman bread drizzled with olive oil and a scraping of fresh garlic.
