Gluten Free & Grain Free Apple Sponge Pudding
In the little town where I live, we have a community garden which is run by a keen group of volunteer gardeners and a Facebook group that was created so that locals can share food with one another for free.
Both are brilliant ideas and they work well together, because it means that if there is produce available at the garden, or my lemon tree is producing way more lemons that my hubby and I can possibly eat, the group page can be used to communicate that to other members and any spare produce is generally left on a table at the garden for others to pick up.
Well, last week a local lady with a small apple orchard placed a notice on the Facebook group to say that anyone who was keen on some organic apples were welcome to come and pick as much as they wanted at a specific time on a certain day.
I was in!
Me and about a dozen other people as it turned out.
Well the apple trees were laden, and although it was obvious that the trees were quite ignored, there were a number of varieties of apples and even though we managed to pass up the apples with too many bug holes, my hubby and I left with three large shopping bags full of apples.
We gave about one and a half bags away and then managed to stew most of what we kept over several days, and so with all this hot apple-y goodness around, the thought of desserts made with those stewed apples came to mind…
Apple sponge pudding! 😀
I hadn’t had one of those for a very long time and so with a little imagination, I managed to create the following recipe and it turned out much better than I had hoped.
The recipe is gluten free, grain free and rather good (if I’m allowed to say so myself). Here it is…
Gluten Free Apple Sponge Recipe (also Grain Free!)
- 1/2 cup buckwheat flour
- 1/4 cup coconut flour
- 1/2 cup tapioca flour
- 1/2 cup coconut sugar
- 3 eggs
- 100 grams butter
- 1/2 tsp baking soda
- 1 tsp cream of tartar
- 1 tsp vanilla essence
- 2-3 cups stewed apples (added honey, cinnamon & mixed spice to taste/optional)
The How To
- Place the stewed apple in an ovenproof dish and put to one side.
- Melt the butter and then mix with the sugar, vanilla essence and eggs.
- Add the liquid mixture to the combined dry ingredients.
- Beat well to make a thick batter consistency.
- Pour the sponge mixture on top of apples and bake at 180 deg Celcius for about 30 minutes.
- Serve with cream or ice cream and enjoy!
…and it really is as simple as that!
