Easy Peasy! Dairy Free Chocolate Coconut Ice Cream
I love ice cream! And it’s one of the few things, that since I’ve really cleaned up my diet over the last few years, I’ve found that I really miss.
To be honest I don’t eat commercial ice creams these days because I’ve found that it’s just pretty much impossible to:
a) Find an ice cream that I can eat with various food sensitivities and
b) Find an ice cream that is clean enough to be worth eating even without food sensitivities! Most of them are full of not only the processed sugar that we all know is in them, but additives, chemicals and who knows what else.
So, my solution? Make my own….
As you’ll learn if you visit this site often enough, I’m not into fluffing around with all sorts of fancy, complicated recipes. So as is my style, this is a really simple, quick, dairy free ice cream recipe. It’s made with just four ingredients (plus extras if you want them – but not essential) and it’s both delicious and healthy!
- 1 x 400ml can of coconut cream
- 3 tablespoons of coconut syrup
- 2 heaped tablespoons of cacao powder
- 2 teaspoons of vanilla extract
The how to:
- Mix all the ingredients together using a stick blender or whisk ensuring that the cacao powder is mixed in thoroughly and no lumps remain.
- Pour into ice cube trays and freeze
Once frozen, put the cubes of mixture through your Samson juicer using the mincing cone.
Note: If you’re not lucky enough to have a Samson juicer, a frozen dessert machine such as the Yonana would probably give a similar result. Alternatively, you could try using a blender or food processor, but I don’t think the texture would be the same.
As in my video above, extra ingredients can be added. In the batch that I made in this video, I’ve added one dried banana chopped into small pieces and a handful of macadamia nuts that I also put through the mincing cone of my Samson juicer, but these aren’t essential.
The basic recipe is great on it’s own with a consistency that’s similar to a snow freeze ice cream when it comes out of the Samson.
I can say that I love my Samson juicer! It’s so versatile and can be used for so many things. If you haven’t heard of the Samson check it out here 🙂
Finally, I hope you enjoy this dairy free, (almost) guilt free ice cream and remember…
P.S. Make sure to use a good ‘clean’ brand of coconut cream with no nasty additives. (remember to read the ingredients on the can) or better still, make your own if you’re really keen…
Because I forgot to take a photo, many thanks to Nomadic Lass (https://www.flickr.com/photos/nomadic_lass/) for the amazing and very chocolaty image 🙂
