Paleo recipe: Lemon, vanilla and goji berry cake
I’m sitting here dreaming of cake and this one sprung to mind. I used it make it a bit, and I originally shared the recipe on my old website. It’s paleo friendly, legal for anyone on the GAPS diet, gluten free, grain free and it’s yummy.
What you’ll need
- 3 cups almond flour
- 1/2 cup of homemade kefir (or you could probably use yogurt or whey)
- 5 large eggs
- Grated zest from 2 lemons
- Two teaspoons of natural vanilla extract
- 1 large tablespoon of honey
- 2 handfuls of currants
- 2 handfuls of organic goji berries
- 2 handfuls of shredded coconut
- A pinch of unprocessed salt
The how to
Mix the almond flour with the kefir and cover with a tea towel or cloth. Leave this to stand for 24 hours at room temperature. This makes the almond flour easier to digest by fermenting it slightly. It also makes the cake fluffy (and it really does!).
The next day add the five eggs and beat well, then add the rest of the ingredients.
Place the mixture in a greased and lined loaf tin and bake for 45 minutes at 180 degrees Celsius. Make sure that it’s cooked by testing with a skewer. If it comes out clean it’s cooked.
And it’s as easy as that!
Change it up
Other ideas to change it up a bit would be to use different varieties of dried fruit, add a mashed banana or two, or some stewed apple (maybe leave out one of the eggs if adding the banana or apple and you could leave out the honey because it would be sweet enough with either of these additions), or even add some mixed spice and cinnamon.
